Nothing says summer like Fried Green Tomatoes. You must know that I’m absolutely obsessed with it. I never tried anything like this until last year when we moved to the South and I was hooked. Delicious! Crispy on the outside and so tender and sour on the inside, I was ordering this dish in every restaurant that offered it. But when I tried making it myself I fell in love with it even more. This healthy Baked Vegan Green Tomatoes recipe will make you eat it all summer long without the guilt. Try it with my Vegan Spicy Smoked Paprika Aioli.
Baked Green Tomatoes
- 1 pound green tomatoes, sliced 1/2 inches thick
- 1 cup whole wheat flour
- 1 cup vegan bread crumbs
- 1 1/2 tbsp avocado oil
- 1 1/2 tbsp water
- 1 tsp baking powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
for Spicy Smoked Paprika Aioli
- 1 cup vegan mayo
- 1/2 lemon, jucied
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/4 tsp cayenne papper
- kosher salt to taste

Line a baking sheet with the parchment paper.

Preheat the oven 425 F.

Place flour, and bread crumbs in 2 separate bowls and set aside.

Mix avocado oil, water and baking powder in the third bowl.

Dip the tomato slices first in the flour, then in the oil mixture, and lastly in the bread crumbs.

Season each slice with salt and pepper, drizzle it with a little oil. Place it on the prepared baking sheet.

Bake the tomato slices for about 30 minutes turning it to the other side half way through baking time.
Spicy Smoked Paprika Aioli

Mix all the ingredients in the bowl.

Adjust the seasoning and enjoy!
